I love you S’more

Who doesn’t love a freshly toasted S’more? Classic s’mores are hard to beat, but let’s be real, we aren’t picky when it comes to a chocolate, graham cracker and marsh mellow combination. But s’mores lakeside with a glass of Washington red? Well friends, it doesn’t get any better than that. We had such a great weekend in Lake Chelan drinking all the wine and eating all things S’mores. But what’s a girl to do when you forgot you trusty indoor s’mores maker and there is a burn ban in effect? You make S’more Rice Krispies Treats and S’mores Jars – no campfire required. Find these delicious recipes below – along with a few others we can’t wait to make!

S’more Rice Krispies Treats

I’ve been making these s’more rice krispies treats for years. They are a gooey delicious hit for the kids, adults and everyone in between. Who doesn’t love a rice krispies treats – especially when they are loaded with chocolate and graham crackers? Yummm.

Ingredients

3 cups rice cereal
4 graham crackers, crushed into bite-sized pieces
1 10-oz bag of mini marshmallows, plus 1 extra cup of marshmallows
4 tablespoons of butter
1/2 cup Hersey chocolate broken into small pieces OR chocolate chips
Using non-stick baking spray, spray a 8×8 baking pan and set aside.

Directions

In a large bowl, combine the rice cereal, chocolate chips and graham cracker pieces.

In a medium saucepan set over medium heat, melt the butter. Add 10 ounces of mini marshmallows and stir with the butter until smooth.

Combine the marshmallow butter mixture with the rice cereal using a spatula to stir everything together. 

Transfer the mixture to the prepared baking pan and press into an even layer. (To keep things clean, use a spatula that’s been sprayed with a touch of non-stick cooking spray to press the mixture into the pan) Sprinkle the extra 1 cup of marshmallows on top.

Using a kitchen torch, toast the top marshmallow layer until just charred. Chill for 30 minutes before slicing and serving. *If you don’t have a kitchen torch* Turn your oven to broil and place the rice krispies into the oven for a few seconds, keeping your eye on them, until the top marshmallow layer starts to get torched. Carefully remove from the oven and continue to let cool as instructed above. 

S’mores Jars

Recipe makes 4 S’Mores Jars

Ingredients

  • Chocolate Instant Pudding Mix (I used Godiva)
  • Whole milk to make pudding (2 cups is what my instant pudding package called for)
  • 1 sleeve Graham Crackers + an extra cracker for garnish
  • 2 Tablespoons unsalted butter
  • Jar of Marshmallow Creme (13 oz)
  • 1/4 tsp liquid smoke
  • Chocolate bar for garnish
  • 8 oz glass jars

Directions

  1. Make instant pudding according to directions on the box, whish in1/4 tsp liquid smoke. and chill in the refrigerator for at least 1/2 hour (could use instant chocolate mousse mix as an alternative).
  2. Meanwhile, preheat the oven to 350 degrees and smash graham crackers with hands and pour onto a rimmed baking sheet lined with parchment paper
  3. Melt butter and pour over crushed graham crackers. Stir with hands until well combined.
  4. Place baking sheet in the oven and toast graham cracker pieces until dry and crunchy, stirring once or twice while toasting. Remove from the oven and let cool slightly.
  5. When ready to serve, spoon 1/2 cup pudding into each 8 oz. jar. Sprinkle with toasted graham cracker pieces creating about a 1-inch layer.
  6. The top graham cracker layer with marshmallow creme. 
  7. Turn the oven on broil and place filled jars on a cookie sheet. Place the cookie sheet in the oven and watch carefully. Remove as soon as marshmallow creme starts to brown. 
  8. Garnish with a graham cracker and square of chocolate. 
  9. Enjoy.
