Aunt Janet’s One Pot Meal

Originally my Aunt Janet’s recipe, this is a super easy family favorite meal that we grew up eating and I still make regularly. After being in Chelan for 10 days, I came home to an empty fridge and zero desire to meal plan for the week. That being said, I also really needed groceries and some vegetables in our lives. So, I Instacarted (can I make that a verb?) all the easy things I could think of that would get us through the week without much effort AKA Aunt Janet’s One Pot Meal. So long story short, this is the perfect meal to serve last minute that requires minimal ingredients and everyone will enjoy! I hope you love it as much as we do!

One Pot Meal

Ingredients

  • 1 tbls olive oil
  • 1 pound mild or spicy chicken sausage
  • 1 large onion chopped (or a bag of chopped frozen onions – I try to have these in my freezer at all times)
  • 2 large cloves garlic, minced
  • 2 cans chicken broth (I like to use bone broth and I usually add a little more)
  • 1/4 cup water
  • 8 ounces spaghetti, broken in half (I use Trader Joes Brown Rice Quinoa Spaghetti (pictured above) or Banza Chickpea Spaghetti)
  • 2 bags fresh spinach, stemmed and chopped
  • Ground pepper
  • Tomatoes, chopped
  • Parmesan

Directions

  1. Heat olive oil in a Dutch oven or stock pot over medium heat; add sausage and cook 3 to 4 minutes, turning as it browns.
  2. Add onion and garlic and cook 2 to 3 more minutes, until lightly browned.
  3. Add broth and water to pot; cover and bring to boil.
  4. Add pasta and cook 3 minutes, stirring frequently.
  5. Add spinach and pepper and cook, stirring spinach into pasta, 2 to 3 minutes more, until pasta is al dente and spinach is wilted.
  6. Serve immediately with chopped tomatoes and parmesan cheese on top.
