Easter Cocktails

What do you bring to an Easter brunch hosted by your mother who every year produces an extraordinarily elaborate array of food and numerous homemade desserts? A few years ago, I decided my answer to this question was an Easter-themed cocktail because when all else fails, booze must be the answer. Am I right? And folks, today was a doozy with my kids. Not sure if the reality of homeschool is finally hitting home for Sam and Emma, but this cocktail post could not have come soon enough for this mom! 

This year our Easter cocktail is spiked Carrot Limeade. Here is how I made it:

Ingredients

  • 2 cups pure carrot juice
  • ½ cup fresh lime juice
  • 3 tablespoons super-fine sugar
  • Seltzer water
  • Vodka

Directions:

In a pitcher, combine carrot juice, fresh lime juice, and super-fine sugar. Stir until sugar dissolves. Cover and refrigerate until cold, about 1 hour. When ready to serve, stir the pitcher and pour over tall glasses filled with ice and top each with 1 shot of vodka and 2 shots of seltzer water. Garnish with 1 or 2 carrot tops or a carrot round, if desired.

The below two cocktails are what I have served in Easters past (and I apologize for any typos! Decided I had to retry all these cocktails before I posted these recipes just to make sure they were right. YOU ARE WELCOME!):

Carrot Mimosas

(makes two servings)

Ingredients:

  • ¼ cup carrot juice
  • ¼ cup orange juice
  • 1 cup champagne

Directions:

Mix carrot juice and orange juice. Pour ¼ cup of mixed juice mixture into each champagne glass. Top with ½ cup of champagne. Top with carrot greens if desired.

Carrot Margaritas 

Ingredients:

  • ¼ cup pure carrot juice
  • One shot Jalapeno Tequila, I used Tanteo
  • ½ shot Grand Marnier
  • ¼ cup fresh lime juice
  • ½ shot fresh orange juice

Directions:

Add all ingredients into a cocktail shaker with ice and shake until combined. Salt the rim of a glass and add ice cubes. Stain the cocktail over the ice. Serve with a lime wedge if desired.
