Jack-O-Lantern Pizza Making in Suncadia Resort
This past weekend, we had a wonderful time in Suncadia enjoying the beginning of leaf peeping season in almost EIGHTY DEGREE WEATHER. When in Washington State have we ever put sunscreen on our kids in October? Weekend highlights included the Rope Rider Golf Park (free Par-3 course adjacent to Swiftwater Cellars Winery); the small-scale lazy river and whirlpool in the Nelson Farm Pool; making s’mores around our firepit using Reese’s Thins; the amazing pumpkin varietals for purchase at the Suncadia Harvest Festival; and watching the Seahawks win at Dru Bru Brewery in Cle Elum.
We kicked off our Suncadia weekend with Jack-O-Lantern pizza making for a fun, seasonally appropriate, festive dinner. Sam, Emma and Joe each got to make their own, Picassoesque jack-o-lantern pizza using pre-made thin mini pizza crusts, Muir Glen-canned pizza sauce, pre-shredded mozzarella cheese, pepperoni slices cut into shapes a la mom, and slices of bell pepper. (Jack just enjoyed throwing mozzarella cheese!).
Then Mallory and I made pumpkin pizzas for the adults. Can you guess who made which Jack-O-Lantern?
This activity is completely scalable – perfect for a simple family pizza night, just right for a kids pizza-making party, and so fun for an adult Jack-O-Lantern pizza design competition served with ghoulish cocktails (why stop at gingerbread houses?). I would suggest serving with all the toppings (mountains of mozzarella cheese, pre-cut pepperoni and salami shapes and slices of onion, olives, bell pepper, & mushrooms) and see how creative the Jack-O-Lantern pizzas can be! And if you are feeling really ambitious you can make you own pumpkin pizza sauce (linked here) or pizza dough (try out this pumpkin pizza crust recipe). However, these pre-made thin pizza crusts that we bought at QFC come two in a pack and are actually really tasty, super simple, and cook in the oven at 400 degrees in just about 10 minutes flat!
