Thanksgiving Cocktails
Thanksgiving might look a little different than anticipated this year, but there is still one thing for sure, there will be cocktails! Because why not?! Let’s kick-off the most joyous time of the year with family and a festive cocktail or two. I scoured the Internet for the tastiest yet simple, aka made in a pitcher, festive Thanksgiving cocktails and then made and perfected them, just for you ;). I used to just be a champs and wine girl but these days I’m up for anything that makes life a little more fun. So, here are my three favorite Thanksgiving cocktails and I highly recommend you make one, two or hey, all three, to make your COVID Thanksgiving a little more festive and fun! Cheers friends!
Sparkling Apple Cider Sangria
- 2 apples, peeled, cored and thinly sliced
- 1/2 cup cognac
- 2 cups apple cider
- 750ml bottle cava (or other dry sparkling wine), chilled
- 1/4 cup pomegranate seeds or cranberries (I used cranberries)
- Add the apples to a large pitcher reserving about 1/2 cup for garnishing. Add the cognac, apple cider, and chilled cava. Stir.
- Fill the pitcher with ice. Pour the sangria into glasses filled with ice and top with sliced apple and pomegranate seeds.
Cranberry Margaritas
- 1 1/2 cups blanco tequila
- 4 cups 100% cranberry juice (not cranberry juice cocktail)
- 3/4 cup orange liqueur, such as Triple Sec
- 1/2 cup freshly squeezed lime juice (from about 4 limes)
- Simple syrup, to taste (1 part hot water, 1 part sugar) (the original recipe did not call for any sweetener but we found it WAY too tart with out it and added about 1 tablespoon to each cocktail)
- Ice
- 1 cup fresh cranberries
- 2 medium limes, thinly sliced
- Place the tequila, cranberry juice, orange liqueur, lime juice, simple syrup and ice in a large pitcher, and stir to combine. Top with the cranberries and lime slices.
- Pour into glasses, adding more ice from the pitcher to each glass as needed. Scoop some of the cranberries and lime slices into each glass when serving.
Sparkling Rosemary Cider
- Fresh rosemary sprigs
- 1 to 2 cups vodka (We used about 1 1/2 cups Vodka; it was too sweet for us with just 1 cup of vodka but taste and add vodka to your liking)
- 1 (750-ml) bottles sparkling apple cider, chilled
- Ice, for serving
- Cut or break 4 fresh rosemary sprigs in half and place in a pitcher. Muddle with a muddler or wooden spoon to bruise and release the oils. For even more rosemary flavor, you can let the vodka sit in the pitcher with the rosemary for a few hours before making the rest of the cocktail.
- Stir in 1 bottle of chilled sparkling apple cider and 1 1/2 cups vodka. Serve in ice-filled glasses.
