The TWO Best Banana Bread Recipes
Megan and I have differing opinions when it comes to the best banana bread. I like my Grandma’s classic recipe that we grew up eating, and Megan prefers this jazzed up chocolate coconut macadamia nut recipe. I go to bed thinking about having it with my coffee in the morning. The perfect recipes for Mother’s Day weekend! Yum!
Banana Coconut Macadamia Nut Bread
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup flaked coconut
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped macadamia nuts
- 1/2 cup chocolate chips
- 2 eggs
- 3/4 cup brown sugar
- 1/2 cup vegetable oil
- 1 cup mashed ripe bananas (about 3 bananas)
- 1/2 teaspoon vanilla extract
Directions
- Preheat oven to 350. Grease a 9 x 5 x 3 loaf pan.
- Mix together flour, coconut, baking powder, baking soda, chopped macadamia nuts and chocolate chips in large bowl. Set aside.
- Break eggs into a mixing bowl and beat until frothy. Add brown sugar and oil and beat well. Stir in mashed banana and vanilla. Add flour mixture and stir just until combined; do not over stir. Spoon into greased loaf pan.
- Bake for 1 hour, or until toothpick inserted in center comes out clean. Let stand for 10 minutes and remove from pan. The bread will but easier if completely cooled before slicing.
Grandma Betty’s Banana Bread
Ingredients
- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 1 cup mashed ripe banana (about 3)
- 1 teaspoon lemon juice
- 2 cups sifted flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup nut meats, chopped
Directions
- Preheat oven to 375 and grease loaf pan.
- Cream butter and sugar together.
- Beat eggs until light and add to butter and sugar mixture.
- Press bananas through sieve and add lemon juice.
- Blend with creamed mixture.
- Sift flour, baking powder and salt together and mix quickly into banana mixture.
- Add nuts.
- Bake in greased pan for about 1 1/4 hours.
