Peanut Butter Bread
Need an alternative to all the banana bread you have been baking during quarantine? Still cannot find any yeast at the grocery store? We have the recipe for you!
Peanut butter bread from a 1932 Five Roses Flour cookbook has been a resurgence during quarantine and has gone viral on the internet. I first saw this recipe being made by @margaux_laskey on New York Times Cooking’s Instagram stories (@nytcooking). Then I found this article on the peanut butter bread posted in the Today Show’s food section. According to both these sources, this recipe resurfaced on Reddit in a section entitled “Old Recipes”, where the community shares recipes from their families or old books. With recipes like “Potato Volcanoes” and “Beef Porcupines”, this Reddit section includes hours of cooking entertainment. The peanut butter bread was also previously shared in this YouTube video.
And because I have already made all the whipped coffee (its just equal parts granulated sugar, warm water, and instant coffee and an electric mixer), no knead bread, and cupcakes that my kitchen can handle, I had to try this peanut butter bread. Who else likes to try all the recipes gone viral?
The recipe doesn’t specify what type of peanut butter (did they even have multiple kids of peanut butter to choose from in 1932?!?!), so I used a mixture of both natural and processed that I had in my cupboard. Next time I plan on trying almond butter. I also added chocolate chips because is there any better combination than peanut butter and chocolate? Super easy; no eggs and all you have to do is stir. The end result was delicious! Not overly sweet (until you add the chocolate chips) and a crowd pleaser. If you have run out of overly ripe bananas for banana bread, I recommend you make this recipe for the upcoming holiday weekend.
INGREDIENTS
- 2 cups all-purpose flour
- 4 tsp baking powder
- ¼ cup granulated sugar
- ½ tsp salt
- 1 1/3 cups milk
- ½ cup peanut putter
- 1 cup chocolate chips (optional)
DIRECTIONS
- Preheat your oven to 325 degrees Fahrenheit
- Mix flour, baking powder, sugar and salt in a bowl.
- Add milk to the flour mixture and then mix in peanut butter.
- If you choose to add chocolate chips, mix in chocolate chips.
- Pour the batter into a greased bread pan and bake for one hour. (Note: I covered top with tin foil for last 10 minutes to prevent top of bread loaf from getting too browned.)
