Fall Fiesta

Its Friday and I am ready for a fiesta (or a siesta, but then again what mom isn’t?!?!). But really, we are in fact going to an outdoor Fall Fiesta party tonight (Mallory is my date) that I bought as an auction item from my children’s school fundraiser almost two years ago (thanks COVID).

Mallory and I love a fiesta! Exhibits A, B and C below. Which really makes me wonder why we haven’t jumped on the Fall Fiesta-themed band wagon before?!?! Mums are the perfect fiesta-themed décor, pumpkins fit right into the color scheme, Trader Joe’s Fall Leaf Corn Tortilla Chips are the perfect seasonal appetizer, and there is no bad time for a margarita!

Here are some ideas for your (or my) next Fall Fiesta!

Margaritas, lots of margaritas. Our favorites are my Skinny White Claw Margaritas, these Watermelon Margaritas, and these Beer Margaritas. Or, as a seasonal alternative, try out Half Baked Harvest’s or Domesticate Me’s apple cider margarita recipes.

Enchiladas for a crowd. You cannot go wrong with enchiladas. This is the best enchilada recipe and you can make them ahead of time, which means you can enjoy the fiesta instead of spending all your time in the kitchen. If you want to really play up the fall theme, try Freutcake’s Pumpkin Chicken Enchiladas. I made them for Halloween last year and really enjoyed the recipe.

Fresh salsa and Trader Joe’s Fall Leaf Corn Tortilla Chips. Our two favorite fresh salsas are this Chunky Black Bean Salsa and this Restaurant Style Salsa. Because nothing goes better with a margarita than chips and salsa.
