Sunday Funday Grapefruit Cocktails
We tried two new grapefruit cocktails over the weekend and both were winners. Each cocktail was refreshing and light for a day in the sun; perfect for the warm week ahead and for all of your backyard summertime cocktail hours. We also pulled out an oldie but goodie recipe of our Aunt Mary’s to serve for lunch – tuna chicken salad. Served on a tasty roll, low carb wrap or boats of lettuce, this tuna salad rivals PCC’s and is the perfect poolside lunch for your family and friends.
Grapefruit Kombucha Margarita
Ingredients
- 1 cup tequila
- 1/2 cup fresh lime juice
- 1/2 cup grapefruit juice
- 4-5 tablespoons simple syrup
- 1/2 cup kombucha (original flavor)
Directions
Combine ½ cup tequila, ¼ cup lime juice, ¼ cup grapefruit juice, and 3 tablespoons simple syrup in a cocktail shaker filled with ice. Shake until chilled, about 30 seconds. Pour over ice in 2 rocks glasses with salted rims if desired. Repeat with remaining tequila, lime juice, grapefruit juice, and simple syrup. Top each glass with 2 tablespoons kombucha; garnish with lime slices. OR if you are feeling lazy, pour all of the above ingredients into a pitcher and pour over ice and enjoy – we didn’t notice a difference!

St. Michelle Chateau-Po Spritz
Ingredients
- 3 oz Chateau Ste Michelle Pinot Grigio (really any Pinot Grigio but #drinklocal #wawine)
- 1 oz fresh grapefruit juice
- 2 oz Topo Chico sparkling mineral water
Directions
Combine Pinot Grigio, grapefruit juice, and Topo Chico sparkling water and serve over ice. Garnish with grapefruit wedge and fresh sprig of mint if you are feeling fancy.

Aunt Mary’s Tuna Chicken Salad
Ingredients
- 1 Can Tuna (6 ounces) well drained
- 1 can Chicken (12 ounces) well drained
- 4 or 6 hard boiled eggs, chopped
- 6 Dill pickle spears, chopped
- 1/2 cup chopped onion
- 1 tablespoon celery seed
- 1 cup chopped pecans
- Mayonnaise
- 1/2 cup grated cheese
Directions
Mix together the above ingredients with mayonnaise to taste. Add in 1/2 cup grated cheese of your choosing if desired. Serve on a wrap, roll, or romaine lettuce.
