Orange Ground Chicken
A couple years ago, Mallory sent me this Orange Ground Chicken recipe from Frugal Nutrition. Its become a staple weeknight dinner for Ryan and I. The recipe has only a few ingredients; it takes only a few minutes to cook after getting home form work; and, most importantly, its really good! Ingredients: 1 tablespoon sesame oil 1 pound ground chicken or turkey 2 tablespoons freshly grated or minced ginger 4 garlic cloves, minced 1 tablespoon Asian spice sauce (try chili-garlic sauce, sambal oelek, or sriracha) 1/2 cup freshly squeezed orange juice 3 tablespoons soy sauce 2 small heads fresh broccoli – about 6–7 cups florets & some stems Sesame seeds for garnish Approximately 3 cups cooked rice, quinoa, or cauliflower…

Pasta Salad for the Win!
Last year I made a habit of posting pasta recipes on Fridays. Today, I am bringing the tradition back with two pasta salads that you really should make this weekend. What’s Up, Doc?
We are just over week out from Easter and apparently have carrots on the brain because today’s post is all about CARROT JUICE. A carrot juice cocktail and a carrot juice pasta because, if you are going to buy carrot juice, you may as well buy the big bottle. Your eyes (and taste buds) will thank you! In the past, we have tended to post a cocktail or a pasta recipe on Fridays. Both seem like a celebratory way to kickoff the upcoming weekend. Halloween Cocktails
Help us decide what Halloween cocktails to serve! As Megan mentioned before in this post about our COVID Halloween plans, we always serve something orange or pumpkin-based for dinner on Halloween. This year, we are going to try Freutcake’s pumpkin chicken enchiladas , so naturally, we are going to have a little Mexican Halloween Fiesta/Day of the Dead party. I plan to make some very naughty nachos to accompany the enchiladas, and might even go crazy with a little queso. Now that we have our food menu established, next comes the Boo-ooze. COVID Halloween Plans
Unfortunately we will not be trick-or-treating this year due to COVID, but we promised Sam, Emma and Joe that we would come up with something for Halloween that is equally fun and candy-filled. Labor Day weekend and I have a complicated relationship. I mean, I love a three-day weekend as much as the next person, don’t get me wrong, but for me Labor Day represents, the last hurrah of summer, and no matter how much fun was had in June, July and August, I am just never ready for school to restart and long, warm days to come to an end. Here is a recipe just in time for Taco Tuesday: Instant Pot Chipotle-Honey Chicken Tacos. The tacos were amazing; highly encourage the pickled onion to go on top; and are great accompanied by the White Claw Margaritas I developed as a twist on Liz Adams’ Skinny Margarita Recipe.
