Goldbelly & Valentine Weekend ReCap
It was such a fun and food-filled SNOWY valentines day weekend! We never get that much snow in Seattle so it’s always a bit of a shock and seriously inconvenient BUT it’s SO MUCH better when your sister lives right across the street! So, while the kids played in the snow, we cooked, ate and drank our way through the weekend. Here are the highlights:
For Valentines brunch, I made Chrissy Teigen’s Everything Bagel Cream Cheese Breakfast Bake which is always a hit, this Nutella Banana Bread by Minimalist Baker, and Megan came in theme with heart-shaped strawberry kabobs, heart-shaped cinnamon rolls with pink frosting and heart-shaped BACON. Okkkk.
I also made a massive Valentine Candy board with little containers for the kids to make their own treat boxes; best way to get rid of all the Valentine candy in our house!
And then Valentines brunch turned into Valentines dinner. Have you heard of Goldbelly? It’s a gourmet food delivery site that will deliver your favorite sandwich, pizza, cookies or meal – you name it – from your favorite restaurant on earth! Pretty crazy and cool that you can get your favorite sandwich from a trip to Nashville 5 years ago through Goldbelly. So naturally, being the foodie he is, my brother ordered his favorite pizza from New York, Joe’s Pizza through Goldbelly for Valentine’s dinner. He didn’t know at the time he was also going to be sharing his pizza with his sisters and brother-in-laws but there was plenty to go around and it was DELICIOUS. Goldbelly is such a fun concept that makes special meals like Valentines more exciting. Check it out! I made my favorite Kardashian Chop to with the pizza and I forgot just how much I love this salad. YUM.
Can’t forget the cocktails! We tried two new festive cocktails this weekend: the Cupid’s Arrow and Pomegranate Kir Royale.
Pomegranate Kir Royale
- 1 ounce pomegranate liqueur (such as Pama)
- 4 ounces chilled dry sparkling wine such as Champagne, Prosecco, or Cava
- Dash bitters
- Pomegranate seeds
- Lemon twist
Add liqueur to champagne flute. Pour champagne into flute over liqueur. Finish with a dash of bitters and a lemon twist.
Cupid’s Arrow Cocktail
- Pomegranate juice
- Cognac or brandy
- Aperol
- Lemon Juice
- Lemon twist
In ice-filled shaker, combine 2 Tbs. pomegranate juice, 2 Tbs. cognac or brandy, 2 Tbs. Aperol and 2 tsp lemon juice. Cover; shake until chilled. Strain into glass and garnish with lemon zest strip.
