Prosecco Pops

Who can say no to a boozy popsicle on a hot day? A boozy and patriotic Prosecco Pop? Even better. These tasty treats can be made with any fresh fruit you have lying around, but given it’s the week of 4th of July, I’m sticking with red, white and blue. Naturally, if I am making Megan and I popsicles I need to make the kids popsicles too otherwise sh*t would hit the fan. So the good news is I have two tasty and simple popsicle recipes for you just in time for the warm (fingers crossed) holiday weekend ahead.

Prosecco Pops

Ingredients

  • Silicone Popsicle Molds
  • 2 mini bottles of Prosecco
  • Blueberries, Strawberries or Raspberries
  • Simple Syrup (to make combine 1 part sugar and 1 part water)
  • Strawberry Lemonade or Lemonade

Directions

  1. Put fruits of choice in the bottom of the popsicle mold.
  2. Pour Prosecco to fill 3/4 of mold.
  3. Add 1 or 2 tsp simple syrup (depending on how sweet you want your popsicles).
  4. Fill the rest of mold with lemonade.
  5. Insert popsicle stick into each mold and let freeze for 10 hours.

*Note: I made the popsicles without simple syrup and didn’t think they were sweet enough. I also tried without lemonade but you need some sort of fruit juice to help them freeze!

Strawberry Banana Pops

Ingredients

  • Silicone Popsicle Molds
  • 1/2 to 3/4 can Coconut Milk
  • Strawberries (a few handfuls of fresh or froze)
  • Banana
  • 2 tbsp honey or maple syrup

Directions

  1. Blend all ingredients in a blender until smooth.
  2. Pour mixture into popsicle molds and insert popsicle stick into each.
  3. Freeze for a minimum of four hours.
