Slow-Cooked Korean Short Ribs

Every fall and winter I have an affair. It’s okay. Ryan knows. The affair happens to be with my slow cooker. And, its completely forgivable because Ryan actually gave me the slow cooker as a gift for my first Mother’s Day after the twins were born . . . not jewelry, a slow cooker.

Before everyone persecutes Ryan – it is actually what I asked for. He questioned it and worried the purchase would come back to haunt him. Now it has, on this blog… But at the time, the All-Clad slow cooker I wanted was an expensive appliance. However, if you break down cost per use, this appliance has been well worth its price tag. During the fall and winter, I use the slow cooker for dinner prep (no joke!) 2-3 times a week. These Korean short ribs are a favorite!

Korean Short Ribs Recipe

  • 2lbs bone in short ribs (either flanken or English style – I’ve used both, it doesn’t matter)
  • 1 cup soy sauce (highly recommend Trader Joe’s low sodium variety)
  • 1 cup brown sugar
  • 5-10 whole jalapeno peppers (Add a smoky flavor not spice. I swear. I know, I was afraid too. Don’t worry.)
  • 1/2 cup water

Cook on low for 8hrs.


I like to serve with brown rice and garnish with diced green onions.

My sister-in-law made this recipe for us for the first time shortly after Sam & Emma were born. Ryan and I love it. Its a Pinterest special. Its simple and delicious. I always steam a variety of vegetables to go with it. This time I added bok choy sautéed with sesame oil, soy sauce, and garlic and steamed broccoli and sugar snap peas.

Despite its so-so reviews, I love it! Yes, you cannot use metal utensils in it. And I recommend you invest in a silicone whisk as well as rubber spatulas and wooden spoons for it. But other than that, its perfect. You can brown meats in it before you slow cook without dirtying another pan. I always prep my slow cooker meal the night before, put the insert in the fridge, and then start it the following morning (or, if you have a childcare at home, ask them to start it at a certain time).
