Waffle-Iron Cookies

I’m sure you’ve seen this done before but we had to try it for ourselves. Sure enough – it works! The best part about these crispy on the outside and soft and delicious on the inside cookies is that they are ready in just a minute or two – no oven preheating required. Not to mention, it’s just a little more fun than your average cookie – for everyone one in the house – kids, adults and everyone in between. We also used my favorite guilt-free cookie recipe from Simply Real Health which made them that much better.

Gluten Free Oatmeal Chocolate Chip Peanut Butter Cookies

  • 1 cup gf oats
  • 1 cup blanched almond flour
  • 6 TB coconut sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 egg (or a flax egg)
  • 3 TB coconut oil, melted
  • 3 TB (or more) peanut butter
  • Couple handful mini chocolate chips and/or butterscotch chips
  • Other add ins: chia and flax seeds

Combine all ingredients above and put in fridge for a bit to chill. If you are using the waffle-iron method, preheat your waffle iron set to medium heat, generously spray with your choice of nonstick cooking oil (we used coconut oil spray) and simply scoop an extra large tablespoon of chilled dough onto your well-greased waffle iron. Cook until your desired crispiness (about 90 seconds for us). If not using the waffle iron method, roll into cookie balls, press each ball down slightly and bake at 350 for 10 minutes.

If you are feeling crazy, top with a scoop of your favorite ice cream and enjoy! These cookies are even better with a glass of red wine! Happy Friday friends! XO
