Blue Friday Football Bites
Sunday is the Seahawks’ first game of the 2020 NFL season and we are BIG Seahawks fans over here on Lets Wine About It Sister (okay, Ryan, Sam and Emma are big fans and I like football food). This week, we celebrated the kickoff of the 2020 NFL Season (see what I did there!) and the Seahawks’ upcoming game with an easy football-themed dinner.
This year might be an interesting NFL season with no fans in the stands, but isn’t that a great reason to make it extra fun at home? Our football-themed dinner included vegetarian Instant Pot chili using this Pinch of Yum recipe (which unfortunately I would only give 7 out of 10 stars) along with corn dog muffins and football brownie bites. If you are looking for some fun and quick ways to celebrate the Seahawks first game, these recipes are for you!
Fun Fact: Sam and Emma love football so much that this past January we threw them a Seahawks-themed 7th birthday party for the Seahawks v. Green Bay Packers playoff game at Zeeks Pizza. Zeeks was so accommodating – highly recommend it as a location for your next pizza party (whenever those can happen again)!
Corn Dog Muffins
This corn dog muffins are SO easy! All you need if your favorite cornbread mix (ours is Trader Joe’s) and hot dogs (highly recommend Teton Ranch – available at QFC or Costco).
- Preheat oven to 375 degrees Fahrenheit.
- Cut your hot dogs so they are only about 1/2 to 1-inch longer than the height of your muffin tins.
- Make your cornbread batter according to the instructions on the package.
- Spray muffin tins with non-stick spray (I prefer mini-muffin size for the right cornbread to hot dog ratio). I also use cupcake liners to make muffin removal even easier!
- Fill muffin cups 1/2 full with batter then add a piece of hot dog to muffin cup so that the hot dogs stick up about 1/2 to 1 inch above the muffin tin rim.
- Place in oven and bake until muffins begin to turn golden brown.
- Remove from oven and let sit until cool enough to remove from muffin tins. Serve immediately.
- Store any leftovers in the fridge. Then reheat in microwave for 20-30 seconds before serving again.
Football Brownie Bites
These football brownie bites also only require two store-bought ingredients: brownie bites and cookie icing. Metropolitan Market sells my favorite brownie bites, but I used QFC’s this time around and they were also pretty tasty. I also like to buy the Betty Crocker version of cookie icing pictured here because it comes with the right size frosting tip on the package. Then, use the cookie icing to draw football laces on top of the mini brownies. Even Sam can do it! Let frosting dry for a few minutes and put on a platter to serve.
