Strawberries, Strawberries Everywhere!
Strawberry season is here! And every grocery store I enter right now has strawberries on sale. Last week, needing to use up the abundance of strawberries in my fridge, I tried two new delicious Instagram strawberry recipes that are must tries while strawberry season is upon us.
First, I tried @ainttooproudtomeg’s Roasted Strawberries & Burrata served with grilled balsamic chicken thighs and toasted rosemary bread. This dish was heavenly. Cannot recommend highly enough!
Roasted Strawberries & Burrata
- 32oz strawberries (hulled but left whole) Note: The strawberries I roasted were HUGE. Next time, I think I will cut the larger of the strawberries in half before I roast.
- 2 tablespoons balsamic vinegar
- 2 tablespoons honey
- salt
- pepper
- olive oil
- baguette (or your choice of bread to toast)
- burrata
- basil
Hull strawberries and toss with balsamic, honey and a pinch or two of salt on a sheet pan covered with parchment paper. Bake at 375 degrees for 20 minutes; toss; then bake for another 15 minutes at 400 degrees. While roasting your strawberries, cut bread slices; drizzle with olive oil and salt (on both sides) and place on a parchment covered sheet pan. Then broil till golden brown (1-to-2 minutes per side). Then, place drained burrata balls in a bowl. Cut an X on the top of each ball; drizzle with olive oil, salt, pepper and a bit of balsamic vinegar; spoon roasted strawberries around burrata; and top with basil leaves.

Second, I made @kalejunkie’s Strawberries Martinis For 2. Admittedly, I’m not typically a martini girl but this cocktail was excellent! Ryan was my first guinea pig, but when the first batch was met with rave review, I made another round for Mallory this weekend. Highly recommend you try before strawberry season is over!
Strawberry Martinis
- 3/4 cup strawberries, halved and stems removed
- 1 tablespoon granulated sugar + extra to rim the glasses
- 3 tablespoons fresh squeezed lemon juice
- 4 ice cubes
- 6 ounces of vodka
Chill 2 martini glasses in the freezer (optional). Once chilled, remove the glasses from the freezer. Rub a lemon wedge around the rim of each martini glass and then turn upside down and dip in the granulated sugar and set aside. In a blender, add the strawberries, sugar, lemon juice and 2 ice cubes. Blend until mixture becomes pureed and liquefied. Transfer the mixture into a large cocktail shaker. Pour 6 ounces of vodka into the shaker along with the remaining 2 ice cubes. Shake vigorously for 30 seconds. Divide between to the two prepared glasses, garnish the rim with a small extra strawberry and enjoy.
