Happy Valentines Day!

We hope this post finds you well! It’s been so long since our last post I’ve forgotten how to do this! Life has been crazy but we are hoping to get back into the swing of things with the blog again. Especially with Valentines day just a few days away – we felt like we had to share all the fun festive things we are doing. So, here are our valentines plans – what we are making, gifting and eating!

Valentines Day Eats

If you remember, Megan and Ryan’s anniversary is on Valentine’s day and each year they take turns cooking for each other rather than going out and battling the Valentines Day dinner chaos (more on that here). Megan is cooking this year and her menu looks amazing – if you need some valentines day dinner inspiration, here it is:

Cocktails

Chocolate Old Fashioned (https://www.jamesonwhiskey.com/en-EN/drinks/drink/old-fashioned-chocolate) and Spicy New Yorker (https://thestripe.com/spicy-new-yorker-cocktail-recipe/)

Appetizer

Whipped Feta Dip with Roasted Strawberries (https://www.walderwellness.com/whipped-feta-with-strawberries/)

Meal

Caprese Steak (use heart-shaped beef steak tomatoes) (https://www.delish.com/cooking/videos/a48611/caprese-steak/) and Caesar Salad with heart shaped croutons (https://www.marthastewart.com/318932/caesar-salad-with-heart-croutons?utm_source=pinterest.com&utm_medium=social&utm_campaign=social-share-recipe&utm_content=20220210&utm_term=318932)

Dessert

Mini Raspberry Pies (loosely based on this recipe: https://thefeedfeed.com/sugaretal/mini-strawberry-pies) with Vanilla Ice Cream

As far as my Valentines day dinner plans, we go out to Varlamos Pizza with our kids (very romantic). For breakfast, we (Megan) ordered all the kids heart shaped donuts from The Donut Factory.

Valentine Chex Mix

Packaging this tasty festive treat for the boys teachers with this free printable I found on Pinterest. You may remember the Easter Chex Mix – this is basically the same thing; you just swap the Easter candy with Valentine goodies.

Ingredients

  • 4 cups Corn Chex Cereal
  • 2 cups Pretzel Sticks or Pretzel Balls
  • 1 cup Dry Roasted Salted Peanuts
  • 1-2 Cups Cheerio Happy Heart Shapes
  • 1 (16 ounce) package Vanilla Candy Coating
  • 1 (6.8 ounce) container Pink Sprinkles
  • 1 cup M&M’s Valentine Milk Chocolate Candies
  • 1 Cup Valentine Peanut M&M’s
  • 1 bag Sun-Maid Vanilla Yogurt Raisins
  • 1–1/2 cups Mother’s X & O Cookies
  • 1-1/2 cups Trader Joes X & O Soft and Chewy Gummy Candy

Instructions

  1. In a large bowl, combine the Chex cereal, pretzels, peanuts and cheerios.
  2. In a microwave safe bowl or the container the candy coating comes in, melt the candy coating according to package directions, usually 90 seconds to 2 minutes, stirring every 30 seconds until melted and smooth. Be sure not to over melt the candy coating as it will burn and become too thick to stir and coat the mix evenly.
  3. Pour the melted candy coating over the ingredients in the large bowl and toss to coat with a large spoon. Ingredients should be evenly coated in the candy coating.
  4. Sprinkle some of the sprinkles over the mixture in the bowl and toss one more time to mix them in. Spread the mixture out in an even layer on parchment paper and immediately sprinkle evenly with 2 more of the sections from the sprinkle container.
  5. Place the remaining ingredients evenly over the sprinkled mixture and allow the mixture to set completely before breaking apart.
  6. Store in an airtight jar, container or baggie.

We hope everyone has a wonderful weekend and Valentines day! XO
